It’s cherry time! We were lucky enough to have loads of sunshine this summer so cherries are looking good right now. I love to eat fresh cherries but even more I love a good cherry pie.

Here comes my very easy cherry pie recipe. I baked this several times, it always comes out yummy. It’s particularly nice served with a dollop of cream or vanilla ice cream. I usually make it with shop-bought puff pastry but if you are a pro, make yours from scratch. This is a very relaxed recipe, I often don’t even measure quantities, I just add what cherries I have, sometimes I top up my fresh ( or sometimes frozen) cherries with kirsch cherries from a jar for extra flavour. But sometimes, I like my pie just plain, no added frills. Take this recipe and make it your own, experiment, play.

Start by turning your oven on. Line a round baking tray with one sheet of puff pastry. I top the pastry with 2 table spoons of ground almond, 2-3 good handfuls of cherries (remove pips first), depending of how you like a pie; I like mine with loads of cherries. Sprinkle 4 table spoons of soft brown sugar on the cherries and a good pinch of cinnamon. Cover with an other sheet of pastry. Brush pastry with one whisked egg and sprinkle some caster sugar on top. Bake for 25 min at 350F.
